Behind the beer:
Dulces Suenos Porter (Nitro)
Dreamy Collaboration with Layers of Flavor
When we teamed up with Old Ellsworth Brewing to craft Dulces Sueños Porter, we knew we were in for something special. This collaboration brew, coming in at 6% ABV, is everything we want in a porter—rich, flavorful, and smooth, with just the right amount of sweetness to keep it interesting. Poured into a glass, the dark, almost black color is exactly what we expect from a porter, and the tan, creamy head just adds to the luxurious look of this beer. But it’s the first sip that really gets our attention: Dulces Sueños is like a sweet, velvety dream in a glass, with deep roasted malts, chocolate, and a hint of caramel that make it feel like a dessert and a beer all in one.
Right from the start, Dulces Sueños hits us with a rich malt profile that’s full of chocolate, coffee, and just the right amount of sweetness. It’s not overwhelmingly sugary, but there’s a nice touch of caramel and vanilla that balances out the darker, roastier flavors. It’s like the beer version of a cozy, indulgent treat—smooth and comforting but not over-the-top. We love the way it’s balanced: the malt sweetness is present without being cloying, and the roastiness never becomes too bitter or harsh. The mouthfeel is smooth and velvety, thanks to the careful brewing techniques from both Simple Machine and Old Ellsworth, making each sip feel as luxurious as the last.
Whether we’re enjoying it with a rich chocolate cake, a smoky BBQ, or even a charcuterie board with sharp cheeses and dried fruits, this beer enhances every bite. The smooth, chocolatey profile makes it the perfect companion for anything indulgent, while the slight caramel sweetness helps it complement savory or spicy dishes with ease. It’s the kind of beer we want in our glass when we’re winding down after a long day, sharing stories around the table with friends, or pairing it with our favorite comfort foods. Dulces Sueños Porter is a beautiful collaboration that showcases the skill and creativity of both Simple Machine Brewing and Old Ellsworth Brewing. If you’re a fan of rich, flavorful porters that don’t shy away from sweetness without being overwhelming, this one’s definitely worth the pour. Simple Machine and Old Ellsworth have given us a beer that’s rich, smooth, and downright delicious—what more could we ask for?
